A standout microlot from our longtime partners at Fincas Mierisch, this washed Red Pacamara Peaberry from their Mama Mina farm brings rare character and refined sweetness to our Single Origin lineup. Grown in the cool, fog-covered forests of Nicaragua’s Matagalpa region, this lot comes entirely from the “Naranja” plot and represents just four bags in total—every bean hand-selected and screened for cup quality.
Mama Mina’s unique microclimate, with over 60% daily fog and naturally cooler temperatures, slows cherry development and enhances flavor complexity. After harvest, each cherry was depulped with minimal water and dry fermented for 36 hours before a careful 15-day drying process using patio shading and raised beds in the greenhouse.
Red Pacamara, a Pacas–Maragogype hybrid known for its large “elephant” bean size and vibrant cup profile, takes on a concentrated sweetness and clarity in peaberry form. A peaberry produced one seed (or bean) instead of the usual two. With only the densest single seeds separated from the full harvest, this lot captures the most expressive side of the varietal.
