This coffee starts with an aroma of cherry wine and dark honey. Followed by flavors of hibiscus, raspberry, tarragon and agave. Our team dubbed this coffee "very complex."
Farm owner Bekele selects coffees harvested on his own farm, Kokoso, and combines these with carefully selected coffees from 1 or more of the 100 independent farms in the surrounding area that he partners with. Once collected, the coffee cherries are sorted based on quality, and placed in raised beds where they remain until dried to a target moisture content over a period of 16 to 18 days.
