Notes on Guatemala Fedecocagua Huehuetenango

With a long history of top quality coffee, Guatemala boasts several microclimates with unique characteristics. The highlands of Northwestern Huehuetenango produce a clean and resonant balance of fruit and unmistakable chocolate notes. This Guatemala is renown for it exceptionally complex acidity. We have found that regular fans of Huehue are almost devoted to this cup above all other Central American coffees.

We like this coffee served black as a filter brew to best realize its juxtaposing spice and aroma. It stands up well to cream and sugar and can even make for an eye-opening espresso preparation for those willing to take on the resulting snappy acidity.

Origin Notes

Zoka is pleased to offer this strictly hard bean (SHB) coffee from the most rugged and arid Northwest mountains of Guatemala’s Huehuetenango highlands. This region is not prized for its volcanic soil, but instead relies on the microclimate for its unique flavor. An extreme elevation of 6500 feet is usually threatened by cold weather and regular frosts. However in “Huehue”, the warm and dry trade winds from Mexico’s Tehuantepec plain protect the coffee trees against the otherwise harsh conditions.

A coffee grown at this altitude produces a highly desirable tangy acidity. This coffee is processed in the washed tradition of the region. After the coffee is pulped it is fermented to release the residual sugars from the parchment. The timing of fermentation is key to the bright and clean character of a fine Guatemalan coffee.

The country of Guatemala and the coffee industry take unusual measures to protect its natural resources. The cultivation of coffee actually bolsters the environment of Guatemala by producing twice the oxygen of the surrounding native flora. Coffee crops and their shade canopies that grow on steep mountainsides help to prevent soil erosion as well as foster biodiversity in growing regions.

This Huehue comes from the Fedecocagua Growers Cooperative, which works to focus the efforts of the surrounding small farmers and ensure that the highest standards of processing are achieved.

Cupping Notes

Caramel and milk chocolate flavors with a raisin sweetness dominate this Guatamalan coffee. In combination with a lively acidity, this offering produces a complex and delicious cup.
