Grind 48 grams (about 7 tablespoons) of coffee to the consistency of kosher salt.
Place filter into the Chemex and wet with hot water. Toss water and then add coffee into the middle of the filter.
Evenly pour 75 grams of water over the grounds, enough to completely saturate the coffee without having it pour through. This presaturates the coffee and releases carbon gasses. Let bloom for 30 seconds.
Continue pouring water over the coffee in an even and circular motion. Don’t rinse the side of the filters as this will dilute the extraction.
Add water steadily until you reach a total of 720 grams (3 1/2 cups). For an even extraction, pour water into the darker areas and avoid the lighter spots. Total brew time should take just over 4 minutes.
Once the extraction process is complete, remove filter and discard grounds in compost. Preheat a mug, pour and enjoy!
